Maple Chocolate Chip Cookies

So why should maple syrup be left out of this HUGE Celebration, We think NOT
Everyone Loves Chocolate Chip Cookies, Everyone should Love Maple Syrup
Much of our society is concerned about processed sugars and other ingredients, so we adapted a recipe from the bakers at King Arthur to satisfy the love of cookie and love of all things maple.
Yield : 2 1/2 dozen cookies
6 Tbs. unsalted butter
1/3 C. Granulated Maple Sugar (see our health blog on benefits of this natural sugar)
1/2 C Brown Sugar
3 Tbs. Pure Maple Syrup
2 tsp. Pure Vanilla Extract
1/2 tsp. Instant Coffee
3/4 tsp. sea salt
1 Tbs. Apple Cider Vinegar
1 Large egg
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
2 C. White Whole Wheat Flour
3 C. Chocolate Chips
1 C. Walnuts (chopped)
Preheat the oven (350), Line baking sheet with parchment paper or lightly spray.
In Large bowl, beat together the butter,sugars,syrup,vanilla,espresso powder,salt until smooth.
Beat in the vinegar,egg,baking soda,baking powder. Stir in the flour, then the chocolate chips and walnuts.. Mix by hand to combine.
Drop (i use a #40 scoop but tablespoon is fine) cookie dough onto prepare baking sheets.
Bake the cookies for 10 minutes. You do not want over baked cookies. Remove from oven but leave on sheet for about 10 minutes, then put them on cooling rack to cool completely.
It is a subtle maple flavor but OH SO tender and wonderful with a nice cold glass of milk or tea.
